The one thing that hasn’t changed about me since childhood is my love for Chocolate Barfi. Who can resist this addictive combination of milk and chocolate, right?

There are plenty of Chocolate Barfi recipes on the internet that will teach you how to make Chocolate Barfi with milk powder in a microwave. While they are easy enough,it fails to take into consideration that not all milk powders are made equal. So it is quite possible that you will end up with a Chocolate Barfi that refuses to set and ends up in a gooey mess.

How is this recipe different ?

I understand that with most recipes, you follow instructions to a T and you will get it right. But making Chocolate Barfi can get a bit tricky if you don’t use the right amount of milk powder depending on the quality or variety of the milk powder.Not all milk powders are created equal, so don’t just dump the milk powder as per the recipe states. Instead follow the guidelines below.

Important : Read this before you get started

  • Milk Powder – The milk powder must be fine to get a smooth texture. For the ones living in the US, do NOT get the store brand. Buy Bob’s Red Mill Milk Powder. They are far superior in taste and have the fine texture that is required for this recipe. If you don’t live in the US, I think the Nestle Brand of Milk powder should work as well as it is a fine powder.
  • Dough texture – In the recipe, I have given you a range for the milk powder and not the exact measure. This is for a reason. You are going to making a dough for this recipe, so use only as much milk powder as you need. The mixture should be just about moist and not liquidized.

  • To a deep microwave-safe bowl, add 4 cups of milk powder, whipping cream, and sugar. Whisk them well making sure they are well blended.
  • Place the bowl in the microwave and cook for 2 minutes, take the bowl out and mix well to get rid of the lumps.
  • Repeat this process 4 more times to bring the total cooking time to 8 minutes. At this point, the mixture should be coming together like a dough.
  • If the dough is too hot to handle, wait for a minute or two. Grease your hands with ghee and knead it for a couple of minutes to get a soft textured dough.
  • Line a 9-inch square baking pan with wax paper or grease it. Add 1/2 of the dough to this pan and level the dough using the back of a spoon, a bowl or your palm.
  • Add cocoa powder and chocolate chips to the remaining dough, microwave it for 30 seconds. Remove from microwave and mix well with a spoon.
  • Add the chocolate dough on top of the white dough and spread it evenly so as to completely cover the white dough.
  • Refrigerate the mixture for about 3-4 hours and allow the chocolate barfi to set.
  • Cut the barfi into the desired shape (square or diamond) and serve at room temperature.
  • Store the remaining pieces in the refrigerator.

  1. Hello, I made this chocolate barfi today and just removed it from the fridge after 4 hrs cooling time and cut it into squares, but the chocolate part of the barfi has separated from the bottom layer, it did not stick together. I have stored the cut barfi back in the fridge now. But where did I go wrong? Why did it not stick together? It wasn’t runny when I placed it in the square tray. Is it still edible too?
    Please advice what could have gone wrong?

    1. Sorry, I couldn’t respond sooner – had a family emergency. I have made this recipe many times and never had the issue. You can gently press them together to see if they combine together. They are edible. No need to throw them away. The only reason I can think of for them not to combine is if you let the bottom layer set and cool before adding the chocolate layer.

    Hi. I tried this for the first time with no cooking skills what so ever lol thank you turned out really good! But one question. How can I make them more fluffy/airy? They were abit too hard and dense.

  3. Hello Anu, I have a carton of 300ml heavy whipping cream, can I use this amount only instead of the 473ml you’ve stated in this receipe for chocolate barfi? Or would I need the exact amount to even the ratio out with the rest of the ingredients?

    1. Hi Bharati – You’ll need the exact amount for that amount of milk powder. Try using about 3 cups of milk powder and you should be good.

    maam can we use mawa with cooking milk chocolate that is been shredded and double boiled plus a little cocoa and required sugar instead of whipped cream and will it work as iam gonna try that now (single layered) .

    1. So sorry to hear that, Anthony. What milk powder did you use? Also, did you read through this section in the post which says – Important: Read this before you get started. I have provided tips on how to avoid this exact issue. Let’s salvage it now – cook it for a few more minutes till the mixture thickens a bit. I know the layers will mix together but at least you will be able to make a barfi out of it. Hope this helps.
