Instant Pot Date Cake

If you want to start making cakes in the Instant Pot, this date cake recipe is perfect for you – failproof and easy. You can whip it up in your blender and bake it in your Instant Pot – it is that fuss-free!
If you have kids who want to learn how to cook, you’ll find that Instant Pot cooking is much safer than a stove top. So when my 11-year old wanted to start baking, we thought Instant Pot would be a great place to start.
We love date cake and it needs no frosting just a light sprinkle of powdered sugar, that’s why we chose this recipe.
The key steps to baking a date cake in the Instant Pot include –
- Add dates to boiling water
- Add baking soda to the mixture
- Whip the batter using a blender or stand in mixer.
- Pour the batter into a greased bundt cake pan
- Cover the bundt pan with foil and use a foil sling to safely place it in the Instant Pot.
- Bake it in the Instant Pot for 30 minutes. Wait for 15 minutes before slowly releasing pressure.

Instant Pot Date Cake
Ingredients
- 1-1/2 cups of seedless dates chopped
- 1 -1/2 cups water
- 1 teaspoon baking soda
- ½ cup or 1 stick unsalted butter kept at room temperature
- ¾ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1-1/2 cup all-purpose flour
- ¼ teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon instant coffee granules optional
- 1 teaspoon unsweetened cocoa powder optional
- Powdered sugar to dust the cake
Instructions
Using a Blender and Instant Pot
- Press the saute function in the Instant Pot and adjust it to the "More" mode. Add 1.5 cups of water and let it come to a boil. Add chopped dates to it and let it cook for 5 minutes. Add baking soda, mix well and hit warm/cancel. Carefully remove the steel insert and set it aside for 15 minutes.
- Using a Blendtec blender - Add eggs, butter, vanilla extract and sugar to the blender jar and secure the lid. Select "Batters" and run the cycle twice or blend on a Medium to Medium-Low speed for 60 seconds.
- Add the date-water mixture and select "Smoothie" or blend on a Medium to Medium-Low speed for 60 seconds
- Add the remaining ingredients - flour, baking powder, coffee powder, cocoa and salt in the blender and secure lid. Press "Pulse" 3–5 times or until dry ingredients are combined with the wet.
- Grease a 6-inch bundt cake pan and pour the batter into the greased pan. Cover it with foil. Add a cup of water in the steel insert of the Instant Pot. Place the trivet. Create a foil sling and place it on the trivet.
- Place the bundt pan and close the lid. Adjust the pressure setting to high and the time to 30 minutes. Once the cooking is done, wait for 15 minutes before releasing pressure.
- Carefully remove the bundt pan from the Instant Pot using the foil sling and let the cake cool in the pan before dusting it with powdered sugar.
Using a stand-in mixer and Instant Pot
- Press the saute function in the Instant Pot and adjust it to the "More" mode. Add 1.5 cups of water and let it come to a boil. Add chopped dates to it and let it cook for 5 minutes.
- Add baking soda, mix well and hit warm/cancel. Carefully remove the steel insert and set it aside for 15 minutes. Grind the dates (along with the water it was boiled in) to a fine paste.
- In a mixing bowl of a stand-in mixer, cream the butter and sugar on medium speed till they are light and fluffy. Add eggs and vanilla to the mixer and continue to beat them till they are combined.
- Add flour, salt, pureed date mixture, baking powder, coffee and cocoa powder and mix them in till they are well combined.
- Grease a 6-inch bundt cake pan and pour the batter into the greased pan. Cover it with foil. Add a cup of water in the steel insert of the Instant Pot. Place the trivet. Create a foil sling and place it on the trivet. Place the bundt pan and close the lid.
- Adjust the pressure setting to high and the time to 30 minutes. Once the cooking is done, wait for 15 minutes before releasing pressure.
- Carefully remove the bundt pan from the Instant Pot using the foil sling and let the cake cool in the pan before dusting it with powdered sugar.
