What I love most is that you are not restricted to making plain rice; you can also make Biryanis, khichdi, pulaos /pilafs, fried rice, and even desserts like rice kheer.

How to cook rice in the Instant Pot
There are many different types of rice, and depending on the variety, the cooking time will change. Here are a few guidelines you should follow if you want to make the perfect rice in the Instant Pot.
Wash / Soak the rice – Rinse the rice in a few changes of cold running water to remove dirt and excess starch (which makes it easier to digest). If time permits, soak the rice. Soaking elongates the grains and makes them less brittle.
Rice-to-water ratio – Most recipes call for either a 1:1 or 1:1.25 rice-to-water ratio. Follow the recipe to make sure you are using the right amount of water. Use a measuring cup instead of winging it to achieve perfect and consistent results.
Cooking time does not depend on the amount of rice cooked: You can easily double or triple the recipe without changing the cooking time.
The cooking times will vary depending on the rice – That’s why you can’t use the standard rice button. For example, white rice takes much longer to cook than brown rice. You may also have to tweak the cooking times depending on the brand to get the desired texture.
Flavor it up – There are easy ways to add flavor to the rice. Here are a few examples – Saute it in olive oil or ghee before cooking, cook it in chicken or vegetable broth, and add fresh herbs such as cilantro, mint, etc. Freshly squeezed lime or lemon juice are great flavor enhancers as well.
Let the rice rest – Once cooked, let the rice rest – this allows the steam to redistribute, and all the layers of the rice are evenly cooked. That is why it is important to wait 10 minutes before releasing pressure. Fluff the rice once it has been rested.
Avoid a clumpy mess – If not serving immediately, remove the inner pot from the Instant Pot to prevent the rice from drying out and sticking to the bottom.
Cooking rice pot-in-pot

- Brown rice can be cooked pot-in-pot with any curries that have a cooking time between 25-35 minutes. For example, curries with pulses such as rajma masala (kidney beans), chana masala (chickpeas curry), etc.
- To make white rice pot-in-pot, cook it with dals such as langarwali dal, tadka dal, etc.
Note: This method works great when cooking 2 cups of rice or less. It saves time, makes for a quicker cleanup, and is much easier.
How to meal prep and store rice
Rice is best when eaten fresh, but you can prepare it in advance if you like to meal prep. Follow the cooking instructions to make the recipe, let the rice cool down completely, and then transfer the cooked rice to an airtight container. Store it in the fridge or freezer (instructions below).
Refrigerator: Up to 3 days in an air-tight container.
Freezer: Store it for a month in an air-tight, freezer-safe container.
Reheating leftover rice – Add a tablespoon of water for every cup of leftover rice. Mix well and pressure cook for zero minutes. When the cooking cycle is complete, move the valve to ‘venting’ to release pressure immediately. You can also microwave rice until it is heated through.
Should rice be cooked on low or high pressure?
I have cooked on both settings, and honestly, I haven’t noticed any substantial difference. Some Instant Pot pressure cookers don’t come with low-pressure settings too.. so don’t fret about it; just cook the rice at high pressure.
How many cups of rice can you cook in the Instant Pot?
There are two lines in the Instant Pot steel insert, one at 2/3rd and one at 1/2. Pulses and grains expand when they cook, so the max line to be considered is the one marked 1/2.
Important: 1 cup of raw rice yields approximately 3 cups of cooked rice.
So when making rice, use the info below as a general guideline on the maximum cups of plain rice you can cook in your Instant Pot.
- 8-quart – 5 cups of dry rice (will yield 15 cups of cooked rice).
- 6-quart – 4 cups of dry rice (will yield 12 cups of cooked rice).
- 3-quart – 2 cups of dry rice (will yield 6 cups of cooked rice).
If you add veggies or meat to cook along with the rice, for instance, while making biryani or pulao, the maximum amount of rice you can cook will change. In that case, make sure not the fill beyond the 1/2 line as marked in the inner pot.
Note: The cooking time as well as the rice-to-water ratio does not change regardless of the amount of rice you are cooking.

Instant Pot Sona masoori rice
In India, making Basmati rice is often reserved for special occasions. Depending on the region, the choice of everyday rice may differ. At home, we ate a lot of sona masoori rice.

Troubleshooting rice
This post would have been incomplete if I didn’t share with you what to do if you run into issues while making rice.
If you follow all the recipes, you shouldn’t run into these problems. But sometimes, we eyeball ingredients instead of measuring them, and things can go wrong if our estimates are inaccurate. Here’s how we can fix most issues –
Undercooked rice – hard and chewy
- Reasons
- Not enough water.
- The sealing ring was not inserted properly.
- Cooked for an insufficient amount of time.
- Solution – Check if the sealing is properly inserted. Add two tablespoons of water for every cup of rice and cook again for two more minutes. Immediately release pressure.
Clumpy rice
- Reason – Rice has not been rinsed properly.
- Solution – Rinse properly next time. Sorry, no fix!
Cooked rice with leftover water
- Reason – Added more water than needed.
- Solution – Use a strainer to drain the excess water. Saute on low heat till the water is absorbed.
Mushy / Overcooked rice
- Reason – Overcooked because of excess water.
- Solution – Repurpose it for yogurt rice (dahi rice) or rice pudding (rice kheer).
Burnt rice
- Reason –
- Not enough water.
- The sealing ring was not inserted properly.
- Cooked for an excess amount of time.
- Solution – Salvage as much as you can from the top if the burnt flavor hasn’t permeated the top layer. Discard the rest.
