If I could do cartwheels, I would. Really.
I don't bake a lot of cakes so when I make one, and it turns out to be so perfect that my kids demand that I make it for their birthday, I do go crazy.
Date cake has been by far the best cake that we have ever eaten that tasted soo good even though it was not loaded with any frosting.
What's not to love about a cake that's made from luscious dates and is moist, soft and so easy to make that you can whip it up in a blender!
It was so good that I am going to let the recipe do all the talking.. and also maybe because I have stuffed my mouth with the last piece of this cake.
I fell in love with this cake the minute I popped it out of the oven. It was perfect! The Date cake had baked beautifully, and it had no cracks - all I did was dust it with some confectioners sugar, and that's it.

...and it was ready to eat!

Date Cake Recipe
Ingredients
- 1 ½ cups seedless dates chopped
- 1 ½ cups water
- 1 teaspoon baking soda
- ½ cup unsalted butter (1 stick) kept at room temperature
- ¾ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ cup whole wheat flour
- ¼ teaspoon salt
- 2 teaspoon baking powder
- Powdered sugar to dust the cake
Instructions
WITHOUT using a Blendtec Blender
- Preheat the oven to 350°F. Grease a 9-inch square pan with cooking spray or butter.
- Boil water in a saucepan and add the chopped dates to it and let it cook for 5 minutes. Add baking soda, mix well and switch off the heat. Set aside for 15 minutes and grind the mixture to a fine paste.
- In a mixing bowl of a stand-in mixer, cream the butter, and sugar on medium speed till they are light and fluffy. Add eggs and vanilla to the mixer and continue to beat them till they are combined. Add both flours, salt, pureed date mixture, and baking powder and mix them in till they are well combined.
- Pour the batter into the greased pan and bake for 35-40 minutes until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the cake cool in the pan before dusting it with powdered sugar
Instructions using a Blendtec Blender
- Preheat the oven to 350°F. Grease a 9-inch square pan with cooking spray or butter.

- Add eggs, butter, vanilla extract and sugar to the blender jar and secure the lid. Select "Batters" and run the cycle twice or blend on a Medium to Medium-Low speed for 60 seconds.
- Add the date-water mixture and select "Smoothie" or blend on a Medium to Medium-Low speed for 60 seconds
- Add the remaining ingredients - both flours, baking powder and salt in the blender and secure lid. Press "Pulse" 3–5 times or until dry ingredients are combined with the wet.
- Pour the batter into the greased pan and bake for 35-40 minutes until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the cake cool in the pan before dusting it with powdered sugar.
Instructions using Instant Pot
- Press the saute function in the Instant Pot and adjust it to the "More" mode. Add 1.5 cups of water and let it come to a boil. Add chopped dates to it and let it cook for 5 minutes.
- Add baking soda, mix well and hit warm/cancel. Carefully remove the steel insert and set it aside for 15 minutes. Grind the dates (along with the water it was boiled in) to a fine paste.
- In a mixing bowl of a stand-in mixer, cream the butter and sugar on medium speed till they are light and fluffy.
- Add eggs and vanilla to the mixer and continue to beat them till they are combined. Add both flours, salt, pureed date mixture, and baking powder and mix them in till they are well combined.
- Grease a 6-inch bundt cake pan and pour the batter into the greased pan. Cover it with foil.
- Add a cup of water in the steel insert of the Instant Pot. Place the trivet. Create a foil sling and place it on the trivet.
- Place the bundt pan and close the lid. Adjust the pressure setting to high and the time to 35 minutes.
- Once the cooking is done, wait for 15 minutes before releasing pressure.
- Carefully remove the bundt pan from the Instant Pot using the foil sling and let the cake cool in the pan before dusting it with powdered sugar.

Can I use whole wheat flour all through instead or half all purpose? Would it get too stodgy? Any tips/tried and tested cake recipes using only whole wheat? Thanks bunch.

Hi Nomi - You are right, the cake will get dense without all-purpose flour but it will taste great. I don't have a lot of cake recipes. I am an occasional baker. Thanks for stopping by.

Njoud - make sure the dates are pureed and no chunks remain. That should solve your problem.

Hi, this recipe is awesome! Made dates cake for the first time today n my family loved it.
The only twist I gave to the recipe is that I added 1/2 cup sugar and boiled the dates in milk instead of water to make it healthier!

Ashna, I haven't tried it but give it a shot. That's how we all learn, right? Reduce the baking time by 10 minutes and do the toothpick test. If it doesn't come clean, continue to cook for another 10 minutes.

Can i just use the chopped dates and water mixture rather than the pureed dates?

You could if you are doing it using a Blender. I don't think it will work with a stand-in mixer.

I’m rating this 5 stars because everyone that eats it loves it and asks for the recipe. However, everytime I make it the bottom burns. It doesn’t matter how much oil I put in the pan or if I make muffins or bread loaf. The bottom has burned the last 4 times I made it. Yes 4 times because people keep asking for it. I have been cutting off the bottom.

How much water are u supposed to boil the dates in.
While using a blender should I pour all the water that the dates are boiled in ? What is the desired consistency of the blended date mixture.

Hi Chaitali - Please use 1.5 cups of water as suggested in the recipe. Yes, do add all the water that your dates are boiled in. The date and water mixture when blended comes out like a paste. I will add pictures next time I make it. Hope this helps.
