Sweet Lassi
Sweet Lassi and Aloo Parathas (Indian flatbread stuffed with mashed potatoes and spices) are a match made in heaven. Eat the parathas first and when the spice starts kicking in your mouth, soothe it down with this Sweet Lassi. If you are new to Lassi, here’s a quick 101. But if you are already familiar with Lassi and have read the Mango Lassi post,  feel free to skip straight to the recipe. Lassi 101 Lassi is a yogurt based drink that finds its origins in the Indian sub-continent. It has a savory as well as a sweet version. The savory one is called Salted Lassi and is flavored with spices such as powdered roasted cumin, grated ginger, and finely chopped coriander. The sweet version of this Lassi replaces the salt with the sugar and includes fruits such as mangoes, strawberries, peaches, etc. Lassi vs Smoothie While Lassi may sound very much like a smoothie, here’s the subtle difference – Lassi is yogurt based whereas Smoothie is fruit based.  This means Lassi may or may not have fruits but definitely has yogurt and Smoothie may or may not have yogurt but can’t be made without fruits. How to make Lassi Traditionally, Lassi is made using a hand held whisk or Madani as they call it in India. But you can use a blender or a mixing pitcher like I do. The process to make Sweet Lassi is pretty simple –  whisk the yogurt, milk and sugar together till they are well blended.  It is traditionally served with a blob of fresh white butter on top. You can also add a pinch of roasted cumin powder and black salt for an extra punch. While Sweet Lassi is not as popular as the Mango Lassi in the US, once you make it at home, you will soon find that it is every bit as delicious as the Mango one.
